Lightened Up Guacamole

Ok so I love my guacamole! If you’re anything like me, you can eat the entire bowl so I have a little trick for you to stretch the avocado... blend it with peas!

As most of you know I am a #wwpartner (down 8 pounds since I started!) and this little trick saves you a lot of points! I know it sounds a little odd, but it really does taste great!!! Steamed asparagus also works, so take your pick. For @ww points, it is 2 points for blue or purple plan, and 3 points for green plan. *People following the WW program can expect to lose 1-2 pounds/week

Lightened Up Guacamole

Total time: 10 min

Yield: 2 cups

Ingredients

  • 1/2 pound Frozen baby peas
  • 1 Medium avocado
  • 2 cloves Minced garlic
  • 2 Tablespoons Minced cilantro
  • Fresh lime juice
  • Salt & Pepper
  • Optional mix-ins: Serrano, jalapeño, onions, tomatoes

Directions

  1. Blanch peas; cool under cold running water or in an ice bath. Place cooled peas in a food processor or blender; add avocado, lime juice, and garlic.
  2. Puree until desired texture; transfer to a bowl. Stir in cilantro; season with salt and pepper. Serving size: 1/2 cup
